Chicken and Rice Casserole

Supplies

Ingredients

  • 1 Cup Uncooked Rice
  • 1/2 Cup Chopped Onion
  • 1/2 Cup Butter
  • 1 Can Cream of Chicken Soup OR
  • 2/3 Cup Flour and 1 1/2 Cup Pet milk(light cream)
  • 3 Cups Diced Chicken
  • 1 1/2 tsp salt
  • 1/4 tbsp Pepper

Instructions

  1. Make Rice and Boil Chicken
  2. Preheat oven to 350℉
  3. Melt Butter into Rice. Dice Chicken and Onion
  4. Mix soup OR flour mixture into Rice
  5. Add Salt and Pepper to mixture
  6. Add Chicken
  7. Pour into glass Casserole dish
  8. Bake for 30 minutes

Sugar Cookies

Supplies

  • Rolling Pin
  • Baking Spray

Ingredients

  • 1/2 Cup Shortening
  • 1 Cup Sugar
  • 1 Egg
  • 3 1/2 Cups Self-Rising Flour
  • 1/2 Cup milk
  • 1/2 tsp Vanilla

Instructions

  1. Preheat oven to 350℉
  2. Cream Shortening and Sugar with Whisk
  3. Add Egg and Blend
  4. Pour in Milk and Vanilla, mix with whisk
    • We're done with the whisk.
    • Use a sturdy spoon now
    • If you try to use the whisk on the flour you WILL regret it.
  5. Add Flour a half cup at a time. Stirring after each addition
  6. Roll out on lightly floured surface to 1/8 in thickness
    • If dough falls apart add 1/4 cup flour to all dough
    • Be careful not to over-mix dough. It will toughen up.
  7. Cut with cookie cutters.
  8. Bake for Aprox. 15 minutes (or until light brown edges) on Sprayed Cookie Sheet

Royal Icing

  • Butter knife or Icing Spreader
  • Bowls
  • Spoons

Ingredients

  • Powdered Sugar
  • Shortening
  • 1/2 Cup Butter
  • Vanilla
  • Milk
  • Food Coloring
  • Grandma's Intuition

Instructions

  1. Add equal parts Shortening and Powdered Sugar.
    • Vary amounts based on desired colors
    • If using the above Sugar Cookie Recipe start with 1/2 cup of each
  2. A dash of Vanilla
  3. A splash of Milk
  4. Mix more as needed
    • Mix in more Powdered Sugar for more quantity
    • More Shortening to thicken
    • More Milk to thin
    • Thicker Icing is best for cookie designs. Thinner for covering large cookie surfaces
    • Solid thickness for cakes
  5. Split into other bowls and add food coloring as desired
  6. Put on COOLED cookies or cakes

Waffles

Supplies

  • Two Smaller Bowls
  • Waffle Iron
  • Big Spoon
  • Whisk
  • Fork
  • Measuring Cups and Spoons
  • Baking Spray
  • Egg Seperator
  • A lot of Time

Ingredients

  • 2 Eggs
  • 1 1/2 Cups All-Purpose Flour
  • 1/2 Cup Cornstarch
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp salt
  • 1/2 Cup Milk
  • 5 tbsp Canola Oil
  • 2 tsp Vanilla
  • 1 tsp White Vinegar
  • 2 tbsp Sugar
  • 1/2 cup club soda Chilled
Club Soda

Instructions

  1. Seperate Eggs. Put egg whites in a small bowl at room temp. for 30 minutes. Put egg yolks to side in the Big bowl
  2. While Waiting...In the second small bowl mix Flour, Cornstartch, Baking Powder, Baking Soda and salt.
  3. In Big Bowl whisk Egg Yolks, milk, oil, vanilla, and vinegar until blended
  4. Beat egg whites with fork until soft Peaks form
  5. Gradually add sugar and beat untill stiff peaks form
  6. Preheat Waffle Maker
  7. Stir Big Bowl mixture with the small bowl of dry goods.
  8. Add club soda
  9. Fold egg whites into batter
  10. Bake in Waffle Iron
